End-of-Summer Heirloom Tomato & Basil Pasta
With the weather starting to cool down here in the Midwest, I thought it was only fitting to create one last summery pasta dish. Summer's freshest vegetables take center stage in this dish, and the only cooking you'll need to do is boil the pasta...the rest takes care of itself! I feel a little silly for posting this "recipe" but sometimes simplicity is bliss.
So, gather your last vegetables from your garden and say farewell to Summer...
1/2 lb pasta of your choice
1 1/2 lbs garden tomatoes, diced into bite size pieces
6 cloves garlic, sliced
2 handfuls fresh basil, chopped
1 teaspoon crushed red pepper
2 tablespoons olive oil
S&P to taste
1. Combine all ingredients (except pasta) in large bowl and mix well. Let sit a few hours (ideally overnight) to allow flavors to fuse together.
2. Serve over fresh pasta and enjoy!
