Spicy Italian Sausage & Kale Pasta

This week, I received my second CSA share...

 ...Which inspired many new recipes, including today's Spicy Italian Sausage and Kale Pasta!

Like last week's Lemon & Kale Pasta, this one uses kale focally in an easy weeknight pasta.
Did you know kale is extremely nutritious and good for you?

On Kale's long list of nutrients: 

Vitamin K, Vitamin A, Vitamin C, Vitamin B6, Vitamin E, Vitamin B1, Vitamin B2, Vitamin B3, manganese, fiber, copper, tryptophan, calcium, potassium, iron, magnesium, omega-3 fats, folate, phosporus, lutein, zeaxathin, sulforaphane, carotenoids, and calcium!

Moral of the story? Eat kale - it's good for you!

{One thing I'm learning with CSA shares: wash all produce thoroughly! Since Terravita Farms does not use any chemical fertilizers, there tends to sometimes be just a few small farm friends nestled in the produce}

Servings: 4

2 large handfuls kale, chopped
2 large spicy Italian sausage links, casing removed
10 garlic cloves, minced
8 oz pasta of your choice
Olive oil
Crushed red pepper (optional)

1. Heat large skillet to medium high heat and add in a few swirls of olive oil. Add in garlic and fry until fragrant, about 2 minutes.

2. Add in sausage and brown well, breaking up into small pieces - about 3 minutes.

3. Add in kale and saute until kale is softened, about 4 minutes.

4. Meanwhile, bring large salted pot of water to boil and cook pasta until al dente. Reserve about 1 cup of pasta water and drain the pasta.

5. Add pasta to skillet and toss well. Add in the reserve pasta water a little at a time to even out the sauce until desired consistency.

6. Top with additional crushed red pepper if desired, and enjoy!
