My CSA share this week included some adorable baby bok choy...which takes me back to another dish from my childhood - Stir Fried Baby Bok Choy and Shiitake Mushrooms!
Such an easy and distinctly Asian side dish that takes all of about 20 minutes from start to finish.
{Shiitake mushrooms are one of my favorite in the mushroom family - so full of flavor, and so versatile too!
Throw them in stir frys, soups, noodles, everything!}
{Baby bok choy is one of the prettiest veggies... when you chop off the stem, you've got automatic little flower sculptures!}

Servings: 4, as a side
4 stalks baby bok choy, stems chopped
4 large dried shiitake mushrooms
2 garlic cloves, sliced
1 tablespoon sesame oil
1 tablespoon soy sauce
3/4 tablespoon sugar
1. Soak mushrooms in warm water for 20 minutes until softened. Slice in half and set aside, reserving about 1/2 cup of the mushroom water.
2. Heat skillet to high and add sesame oil. When hot, add in garlic and stir fry until fragrant, about 1 minute.
3. Add in baby bok choy and mushrooms and stir fry until lightly wilted, about 2 minutes. Add in the reserve mushroom water (this helps to steam the bok choy a little, speeding up the cooking process and adding in flavor as well).
4. Add in soy sauce and sugar, mix well, and enjoy!

I love bok choy! It's my go to veggie every week. I haven't tried it with shiitakes yet though. Will have to try! Patricia
